These cookies are named after Speculoos and are traditional Belgian cookies. They are so delicious and we are so addicted to them. Everywhere you go in Belgium they offer one of these cookies.
Spekulaas, speculoos or spekulatius is a type of traditional Christmas cookie in Belgian and Dutch cuisine.
The mass of speculoos grows very little, because there is only a little chemical yeast. These cookies are a mixture of butter with a combination of spices and brown sugar, and then add the flour and yeast to the mixture. It is important not to work the dough too much so that it does not heat up. The ideal is to let it rest at night in the refrigerator so that the flavor of the spices develops. Then, give them the desired shape with traditional molds and bake in the oven.
The spices that are used to make these cookies are their particularity. It is a mixture of cinnamon, nutmeg, cloves, powdered ginger, cardamom and white pepper. The ones I made only take cinnamon and ginger.
